The lime (Citrus aurantifolia) is a citrus also called acid lime or even more commonly lime. The lime is the fruit of the lime tree, a shrub of the rutaceae family. The lime looks like lemon but is not a lemon, it has the same skin color as the lime but is much smaller, its flesh is juicy and sour. Originally from India or Malaysia, the lime was introduced into the Mediterranean countries by the crossed soldiers, then the colonists transported it from Portugal to America. It was then used on ships bound for the new world to fight scurvy thanks to its richness in vitamin C.
Lime cultivation, maintenance and harvesting
Like all fruit trees producingcitruss, the lime tree should be grown in hot Mediterranean or tropical climates. The lime tree appreciates well-drained and stony soils. For pot plantations, the lime tree is planted throughout the year. It is best to keep it indoors during the winter, it will not stand frost. The lime tree sees its first flowers arriving in spring and its fruits, the limes, appear just after. The lime is harvested before maturity when the fruit is about 8cm.
Using the file
The lime is widely used in cooking, it brings a touch of acidity to dishes based on fish or shellfish. Rich in vitamin C, lime is also used in ice creams, creams, lemonade, vinaigrette but also in sauces or in cocktails like mojito. The file can also be used in cosmetology thanks to its astringent powers allowing to give a boost to dull complexions thanks to a few drops added to a clay mask, for example.
